Dollop Shop is a full-service woman-owned bakery located in Toledo, Ohio.
Every day, we serve up a variety of freshly-baked, hand made croissants, pastries, and desserts alongside locally sourced coffee and tea. You can take your goodies to go, or stay awhile and enjoy them in our upstairs dessert parlor, where we also host a full calendar of events. We take pride in offering spectacular custom cakes and dessert tables for any occasion.
What sets us apart is our commitment to the craft of baking, and our dedication to creating experiences around food. We make everything from scratch with real ingredients—from custom cakes to croissants to cocktails. We don’t use cake mixes, pre-made fillings, or canned frosting. You won’t find our pastries anywhere else. When we’re sold out, we’re sold out. Our cozy space is designed for meeting, working, playing, studying, or simply slowing down and enjoying something special. Our events invite the community in to experience food and drink how we see it—a way to tell stories, celebrate, and connect with each other. About the Owners
Born and raised in Toledo, Claire and Zach are a husband-wife team who are passionate about bringing people together over food and drinks. When they’re not making croissants or frosting cakes, you can find them hanging out with their son, running, or watching horror movies (but let’s be honest, odds are they’re probably having a cocktail on the couch and arguing about the next event theme). Claire also enjoys painting, yoga, and arts and crafts. Zach is a musician and has a symbiotic relationship with his dog, Ace Frehley. Claire and Zach take great pride in their hometown, and they agree that people who think Toledo is boring are probably boring themselves.
Before the bakery, Claire was a physician. In 2020, she left her job because she was burned out and unhappy. Besides having an increasingly negative impact on her mental health and family life, she knew that a career in medicine would never fulfill her creatively. She started baking and selling cakes and macarons out of her home kitchen, and eventually opened Dollop Shop in its current location in 2022. A musician by trade, Zach was a real estate agent (and an all-around good sport) when Claire opened the bakery in 2022. At first, he stepped in to help with inventory and vendor relationships on a part-time basis. As the bakery gained momentum, and the menu expanded to include cocktails, Claire taught Zach how to make croissants. In 2024 Zach came on full-time as the resident croissant and cocktail king.
